The Story of 風 | Flossie & Fern

フロッシー＆ファーンの物語

I grew up with the salt of the sea in the air and the earth beneath my fingernails.
From Yorkshire kitchens to garden ground, flavour was never something I studied — it was something I absorbed.

Later came the city: boardrooms, clients, late nights in restaurants where the wine was older than me.
In those years, between contracts and conversations, I found another kind of education — the theatre of dining, the language of interiors, the quiet confidence of a Wedgwood plate glimpsed in a Staffordshire showroom.

Flossie was born there.
She carries porcelain and pause.
Tea poured properly. Gentle light. The calm assurance of things made to last.

Fern came from elsewhere — and earlier.
From soil and smoke, from hands in the earth and pans still warm from the stove.
She is down-to-earth, wholesome, and shaped by the season.
Food cooked to nourish, not to impress.

風 | Flossie & Fern is stitched from all of it:
meals with family, friends, and lovers;
the elegance of fine dining during my pharmaceutical years;
and the deep comfort of home cooking, with smoke still clinging to the pan.

They are not real women, but characters born of many —
women who taught me resilience,
places that taught me beauty,
and moments that taught me that imperfection has its own grace.

Now I live in the mountains of Gunma, where fields breathe against fine Wedgwood.
Here, Flossie and Fern finally sit at the same table.

I set simple, wholesome food against eccentric detail,
offer bold flavours beside quiet tea,
and try to slow the pace enough for people to notice
the beauty that has always been around them —
and within them.

 

私は、海の塩の香りが漂う町で育ち、指先にはいつも大地の感触がありました。
ヨークシャーの台所から庭の土まで、味というものを学んだのではなく、ただ自然に染み込ませてきたのです。

その後、都会での暮らしが始まりました。
会議室、クライアント、そして自分よりも古いワインが並ぶ夜のレストラン。
契約と会話の合間に、もう一つの学びに出会いました。
食事という舞台、空間が語る言葉、そしてスタッフォードシャーのショールームで目にしたウェッジウッドの皿が放つ、静かな確かさ。

そこで生まれたのが、フロッシーです。
磁器と余白。
丁寧に淹れられた紅茶。
やわらかな光と、長く使われるものの安心感。

一方、ファーンはもっと早く、別の場所からやってきました。
土と煙、手のひらに残る大地の感触、まだ温もりの残る鍋。
彼女は素朴で、滋味深く、季節に寄り添う存在です。
人を満たすための、気取らない料理。

風 | Flossie & Fern は、そうしたすべてから生まれました。
家族や友人、恋人たちとの食卓。
製薬業界で経験した洗練された食の世界。
そして、煙の香りが残る家庭料理のぬくもり。

彼女たちは実在の女性ではありません。
多くの出会いから生まれた象徴です。
強さを教えてくれた人々。
美しさを教えてくれた場所。
不完全さこそが持つ優雅さを教えてくれた瞬間たち。

今、私は群馬の山の中で暮らしています。
呼吸する田畑と、繊細なウェッジウッドが並ぶ場所で、
フロッシーとファーンは、ようやく同じ食卓に座りました。

ここでは、滋味深い料理と少しの遊び心、
力強い味わいと静かな紅茶を並べ、
人が自分のまわり、そして自分の中にある美しさに
そっと気づけるよう、時間の流れを少しだけゆるめています。

Flossie lives in porcelain and pause.
In Wedgwood cups warmed by the hand, in tablecloths laid straight, in the quiet confidence of things made well — and made to last.

Here, the light is gentle.
Floral Gucci wallpaper glows softly in yellow; linen is laid with care, flowers placed without fuss.
Handmade, seasonal English puddings are crafted not for display, but for silence —
the kind that falls when sweetness is balanced, when a spoon slows, when conversation drifts into thought.

This is elegance without effort.
Shoji panels soften the room with Japanese calm.
Tea is poured properly.
Refinement never raises its voice.

Flossie is a small English tearoom in the mountains — unhurried, intimate, and quietly welcoming.

Fern lives beyond the fusuma panels, where the house breathes more freely.

In the Kaze Room, rafters open to the air and timber still carries its weight.
Blackened wood remains from the long-buried open fire.
The mountains press close to the windows.
A wood-burning stove — sooty, honest — breathes heat and smoke into the space.

Here, food begins in the field and ends at the table.
Local, seasonal produce cooked simply and generously.
Wholesome dishes shaped by weather, soil, and time —
meant to ground, to restore, to fill both body and spirit.

This is comfort without apology.
Plates that warm the hands.
Flavour that knows exactly where it comes from.

フロッシーは、磁器と「ひと呼吸」の中に生きています。
手のひらで温まるウェッジウッドのカップ。
きちんと整えられたテーブルクロス。
丁寧につくられ、時を超えて使われるものだけが持つ、静かな自信。

ここでは、光もやさしくあります。
黄色くやわらかに輝く花柄のグッチの壁紙。
心を込めて敷かれたリネン、気負わず生けられた花々。
季節ごとに手づくりされる英国式プディングは、
見せるためではなく、静けさのためにあります。
甘さが調い、スプーンの動きがゆるみ、
会話がいつしか思索へと溶けていく——そんな静けさのために。

それは、力まない上質さ。
障子越しの日本の静けさが、空間をやさしく包みます。
紅茶は、きちんと注がれます。
洗練は、決して声を張りません。

フロッシーは、山あいに佇む小さな英国式ティールーム。

ファーンは、襖の向こう側に息づいています。
家がより自由に呼吸を始める場所。

風の間（Kaze Room）では、
梁が空へとひらかれ、
木と石は今もその重みを宿しています。
かつての囲炉裏の名残を留める、煤けた木。
窓の向こうには、山々が間近に迫り、
正直で無骨な薪ストーブが、
熱と煙を静かに吐き出しています。

ここでの料理は、畑から始まり、食卓で結ばれます。
地元の、季節の食材を、
素直に、たっぷりと。

天候や土、時間に形づくられた滋味深い料理は、
身体と心を地に戻し、
静かに満たすためのもの。

ここにあるのは、言い訳のない心地よさ。
手を温める皿。
自分の来歴を、きちんと知っている味。
