The Story of 風 | Flossie & Fern フロッシー＆ファーンの物語

I grew up with the salt of the sea in the air and the earth beneath my fingernails.
From Yorkshire kitchens to garden ground, flavour was never something I studied — it was something I absorbed.

​

Later came the city: boardrooms, clients, late nights in restaurants where the wine was older than me. In those years, between contracts and conversations, I found another kind of education — the theatre of dining, the language of interiors, the quiet luxury of a Wedgwood plate glimpsed in a Staffordshire showroom.

​

 風 | Flossie & Fern is stitched from all of it: the meals with family, friends, and lovers; the elegance of fine dining in my pharmaceutical years; the comfort of home cooking with smoke still clinging to the pan. They are not real women, but characters born of many — women who taught me resilience, places that taught me beauty, and moments that taught me that imperfection has its own grace.

Now I live in the mountains of Gunma, where the fields breathe against fine Wedgwood.


Here I set simple food against eccentric detail, offer bold flavours beside quiet tea, and try to slow the pace enough for people to notice the beauty that has always been around them — and within them.

 

私は海の塩の香りが漂う町で育ち、指先にはいつも大地の感触がありました。
ヨークシャーの台所や庭の土のぬくもりの中で、味というものを学んだわけではなく、ただ自然に染み込ませてきたのです。

その後、都会の暮らしが始まりました。会議室、クライアント、そして自分よりも古いワインが並ぶ夜のレストラン。


契約と会話の合間に、もう一つの学びを見つけました——食事という舞台、空間が語る言葉、そしてスタッフォードシャーのショールームで偶然目にしたウェッジウッドの皿が放つ静かな贅沢。

風 | Flossie & Fern は、そうしたすべてから生まれました。
家族や友人、恋人たちとの食卓。製薬業界で経験した洗練された食の世界。
そして、まだ煙の香りが残る鍋で作る家庭料理のぬくもり。
彼女たちは実在の女性ではなく、多くの出会いから生まれた象徴です——私に強さを教えてくれた人々、美しさを教えてくれた場所、そして不完全さこそが持つ優雅さを教えてくれた瞬間たち。

今、私は群馬の山の中で暮らしています。
ここでは、呼吸する田畑と繊細なウェッジウッドが出会います。
素朴な料理に少しの遊び心を添え、力強い味わいと静かな紅茶を並べ、
人が自分のまわり、そして自分の中にある美しさに気づけるよう、時間の流れを少しだけゆるめています。

At noon, just six guests take their seats for The Six at Noon Christmas Lunch — a quiet three-course conversation between the mountain and the heart. Each dish listens to the season’s voice, weaving warmth, colour, and memory.

Arrival Cup 

Pear & Shiitake Broth 
Before words, a sip — clear as morning mist.
Forest umami meets orchard breath; a calm balance of pear, shiitake, and time. The mountain whispers, "you have arrived".

I – Forest Ember

Roasted Shiitake with Caramelised Pear, Parma Ham & Chestnut Purée


A harmony of woodland umami and orchard sweetness — autumn’s final warmth before the frost.
The shiitake’s earthiness meets the soft perfume of pear and the nut-smooth depth of chestnut, brought together by a glint of mountain honey and a whisper of yuzu.

II – Hearth & Home

Mountain Shepherd’s Pie with Honey-Roasted Carrots
Tender lamb and beef gently simmered with shiitake, daikon, and red miso — tucked beneath clouds of creamy miso-whipped potato,
then baked until the edges glow like the mountain’s afternoon light.
Comfort reborn on the winter breeze.

III – Candlelight Crumble (Deconstructed)

Persimmon & Apple Compote, Lemon Posset & Miso Caramel
A golden orchard reimagined — spiced fruit and oat crumble kissed with the glow of miso caramel.
A quenelle of lemon posset melts slowly into the warmth of apple and persimmon — a soft sigh of sweetness to end the day.

From 14:00 – Tea & Pudding | ¥1,800

​

After lunch, the kettle sings again.

A cool lemon posset beneath warm spiced apple and oat crumble, paired with Flossie’s Blend — Assam and Ceylon with cinnamon, clove, and ginger, blended for Gunma’s soft water.

​

This is not Tokyo polish but something gentler — British eccentricity meeting the rhythm of Gunma’s fields and winds.

​

The scent of pine, the hush of snow, a table set in candlelight and laughter.

​

Come for lunch, stay for tea, and leave with the quiet joy of a Yorkshire Christmas carried in your heart.

A limited seasonal experience with only six guests per sitting — where English charm meets the mountain breeze. Come share our table, our tea, and a Yorkshire Christmas beneath the Gunma sky.

正午になると、わずか六名のゲストが席に着きます。
「ザ・シックス・アット・ヌーン クリスマスランチ」——山と心が語り合う、静かな三つの皿の物語。
それぞれの料理が季節の声に耳を傾け、温もりと彩り、そして記憶を編み込みます。

山の中のヨークシャー・クリスマス

​

到着の一杯
梨と椎茸のブロス

言葉の前に、一口——朝霧のように澄んだ味わい。
森の旨味と果樹園の息吹が出会い、梨と椎茸、そして時が静かに調和する。山がささやく——「ようこそ、辿り着きましたね」。

​

I – 森の余燼（よじん ）

焼き椎茸とキャラメリゼした洋梨、パルマハム、栗のピュレ
森の旨味と果樹園の甘みが響き合う——霜が降りる前の秋の名残。
椎茸の香ばしさに、洋梨のやわらかな香りと栗のなめらかなコクが寄り添い、山の蜂蜜と柚子のささやきが全体をやさしく結ぶ。

 

II – 炉と家（ハース・アンド・ホーム）

マウンテン・シェパーズパイとハニー・ローストキャロット
椎茸と大根、赤味噌で静かに煮込んだラムとビーフを、
味噌を混ぜたクリーミーなマッシュポテトで包み、
山の午後の光のように輝くまで焼き上げました。
冬の風に寄り添う、心温まる一皿。

 

III – キャンドルライト・クランブル（分解仕立て）

柿とりんごのコンポート、レモン・ポセット、味噌キャラメル
黄金の果樹園を再構築したデザート—スパイス香る果実とオート麦クランブルに、味噌キャラメルの輝きをまとわせて。
レモン・ポセットのクネルが、柿とりんごの温もりの中で静かにとろける。一日の終わりを告げる、やわらかな甘い吐息。

14:00から – ティーとプディング | 税込 ¥1,800

​

昼食のあと、再びやかんが歌い出します。

温かなスパイス香るりんごとオート麦のクランブルの下に、ひんやりとしたレモンポセット。「フロッシーのブレンド」——アッサムとセイロンに、シナモン、クローブ、生姜を調合し、群馬の軟水に合わせた紅茶とともに。

 

これは東京の洗練ではなく、もっとやさしいもの。
英国の風変わりな魅力が、群馬の田畑と風のリズムに出会う場所。

 

松の香り、雪の静けさ、キャンドルと笑い声に照らされたテーブル。
